Baked Sweet Potato

If you are looking for a healthy warming lunch, try this!!
Bake one large sweet potato per person in the oven for about 45 minutes or until soft
Scoop out the centre and mix with cottage cheese (or vegan alternative), chives and black pepper.
Put the sweet potato mixture back into the potato skins, sprinkle with paprika and place back in the oven for 5-10 minutes until heated throughout.
Eat with a green side salad of locally grow rocket and spinnach and enjoy!
