Pan fried Sprouts with Chorizo (or Chestnuts) and Red Onion
Serves 4
Time to prepare and cook – 25 minutes from start to finish!
Ingredients
500g sprouts
75g ciabatta bread, cut into cubes
110g chorizo, chopped (any rind removed) (Or cooked chestnuts for a vegetarian option)
1 red onion, sliced
1 clove garlic, crushed
Sea salt
1 tablespoon olive oil
Method
Steam the sprouts for two minutes to par-cook them
In the meantime, heat the olive oil in a large frying pan then add the ciabatta cubes. Cook until golden, adding sea salt at the end. Put the cubes into a bowl.
Add the chorizo (or chestnuts) to the pan for two minutes, stirring occasionally
Add the onion and garlic and cook for another two minutes
Add the sprouts and stir fry it all together for three minutes
Pour into a bowl and add the ciabatta cubes
