EASY SHEPHERDS PIE
Serves eight (freeze as individual portions for your ‘ready meals’)
750g minced organic lamb
3 large onions
2 cloves of garlic
6 carrots, scrubbed and thinly sliced
1 jar of Jamie Oliver crushed tomatoes (rinse out with a third of the jar of water and add this to the sauce)
2 Organic stock cubes (I prefer the taste of the chicken cubes but you can use any that
you like)
A little cornflour mixed to a very thin and runny paste to thicken the sauce
Herbs – either a pinch of dried mixed herbs or use a few leaves of basil, roughly torn, and some parsley, roughly chopped
8 large potatoes
Drop of milk (and a little butter if desired)
Serve with seasonal green veggies (if desired)

Large saucepan
Chop the onions and garlic and fry in a large saucepan until golden brown
Add the minced lamb and fry off until brown
Add the carrots
Add the chopped tomatoes and water (rinse out the jar with a third of a jar of water and add this)
Add the herbs
Add the stock cubes
Add the cornflour runny paste
Leave to simmer very gently for an hour, stirring occasionally. Add a little water if it is thickening too much
After 20 minutes, scrub, or peel if necessary, the potatoes, cut into cubes and place in a large saucepan
Boil the kettle and then cover the potatoes well with water. Bring the water back to the boil, turn down to vigorous simmer and simmer the potatoes for 20 minutes until soft (if a knife can be slid into them easily they are done).
Mash the potatoes with a little milk (and butter if desired)
Put the meat sauce into a large rectangular oven proof dish and place the potato on top
I find it easy to spoon the potato onto the meat sauce and then join the spoonfuls by dragging along with the back of a fork (it also makes a pretty design!)
Put in the oven, on a baking tray to avoid spillage, and cook for 20 – 25 minutes on 180 degrees
It can be eaten on its own as there are veggies included, but you can also serve with seasonal green veggies
