Fresh Juices, Compotes And Iced Lollies

JUICES
APPLE PEAR AND GINGER JUICE
Apples and pears are a good mix (like Cockney rhyming slang!) but for added warmth on cooler days add ginger. Apple juice is cleansing and good for the gall bladder and ginger helps sufferers of indigestion.
Ingredients
1 apple
1 pear
1 small cube of fresh ginger
Method
Wash the fruit and cut into small chunks (no need to peel or core) to fit into the juice machine feeder
Juice the fruit and ginger pieces
Pour into a glass and drink!
FRUITS OF THE FOREST COMPOTE
The compote is delicious with ice-cream or crème fraiche, or in a summer pudding. It can also be frozen
Ingredients
65g redcurrants or blackcurrants
120g blackberries
120g raspberries
100g sugar
Squeeze of lemon juice
Method
Add the sugar to the berries in a bowl and set aside for one hour
Add the lemon juice and set aside to be used, or freeze in sealed containers until needed
FRESH BERRY LOLLIES
Children love iced lollies in the summer, so why not sneak in some fruit! My children also used to love making their own - keeps them occupied in the school holidays!
Ingredients
500g fresh berries - strawberries (or raspberries or blackberries)
250 ml of water (spring water preferably)
200g sugar
Squeeze of lemon juice
Method
Add the sugar to the water and dissolve in a pan, stirring with a wooden spoon all the time
Bring to the boil - simmer vigorously for five minutes
Turn off the heat - allow the syrup to cool
Pass the berries through a sieve to remove seeds and squash the fruit ready for the lolly making!
Add the berry puree to the syrup, together with the lemon juice
Pour into lolly moulds, add a stick and freeze!
